Soccer Buddies is a child development soccer program for children ages 15 months through 5 years old. Our high-energy, well trained coaches will take your child on an imaginative roller coaster ride through a jungle safari and into outer space…all the while building their motor skills, physical fitness, confidence, coordination and more through the game of soccer. In October 2012, Jim Spittler and his wife Elizabeth (Members of The Club at Flying Horse), organized an event to honor first responders and families affected by the Waldo Canyon Fire. Mr. Spittler approached The Club to partner with him to create a golf outing where these special guests had the opportunity to enjoy a nice fall golf outing to include a round of golf and lunch at The Club at Flying Horse. Jim also reached out to The Club's Full Golf Members with a request for sponsorship of a foursome and/or a hole at the golf outing that was held on Monday, October 22, 2012. Eighty (80) golf players (all Waldo Canyon Fire Families and First Responders) were hosted by a Flying Horse Club Member in each group. Spittner's goal was to raise enough money to cover the cost of the day--giving the first responders and fire families the simple gift of a nice day at The Club. The Spittler's, together with The Club at Flying Horse and its participating Members, accomplished so much more! When all was said and done, this kind-spirited event raised nearly $3,500 in additional funds! The funds were then donated to Colorado Springs Together for its initiatives in Waldo Canyon and the Mountain Shadows neighborhoods.
Congratulations to the Spittler's, The Club Golf Staff, the Club Members who supported this effort, and the Waldo Canyon Golf Teams for a job well done! Flying Horse is proud to be part of this wonderful act of community support.
How Colorado Springs Together Uses Funds Raised:
Colorado Springs Together identifies needs, facilitates solutions, offers guidance, and communicates effectively to the communities impacted by the Waldo Canyon Fire to assure a successful long-term restoration.
Donated funds will be used to coordinate these efforts through a resource center in Mountain Shadows and the Colorado Springs Together website. Donations will also be used to support the recovery of the communities with programs, events, and activities. Allocation of funds will be authorized by a volunteer advisory board that includes representatives from the affected neighborhoods.
Requests for individual financial support, for needs that are not covered by private property loss and damage insurance, will be referred to the appropriate charitable organizations.

Executive Chef Ketil Larsen and Sous Chef Eric Hill win big at the 27th Annual Chef's Gala in Colorado Springs. They took first place with their Crawfish, Shrimp and Grits in the Best Appetizer Category. And, they were in good company, with more than 24 esteemed competitors! They wowed the panel of nationally-recognized judges with a succulent medley of crawfish, shrimp, and grits. Congratulations Ketil and Eric! Well done!

Upgrade to new equipment by trading in old unwanted clubs from your garage! We take trade on most all clubs. Just drop them by the Golf Shop or talk to Jake to get a quote. Credit from your old unwanted clubs can be used to buy new clubs or merchandise from the golf shop!

The spring season is a great time to spend exploring new club options. With the Learning Center we are able to allow you to hit clubs and experience the true ball flight year round. If you are interested in custom fitting your current set or looking to get fit for a new set please give your golf shop a call.

-We are currently fitting with the Nike Victory Red fitting system but can custom fit and custom orders from most major brands including Taylormade, Cleveland, Nike, Callaway, Titleist, Ping, and more!

Day After Thanksgiving Soup Recipe
“Wife of Kit Carson Soup” -- Recipe offered by Encore resident Ron Britt
Serves: 8
1/2 cup dry garbanzo beans
8 cups chicken stock
2 pounds turkey legs or, chicken
1 chopped yellow onion
1 bay leaf
8 whole peppercorns to taste
1 teaspoon salt to taste
3 tablespoons uncooked brown rice
1 1/2 teaspoons crumbled dry oregano
1 chopped chipotle chile or, substitute dry ground chipotle chile
8 ounces diced Monterey jack cheese
2. tablespoons chopped parsley fresh
1 large sliced avocado
Beginning the day before, soak the garbanzo beans in water for at least 12 hours. Drain and rinse beans place in a soup pan and completely submerge in water and bring to a boil and reduce the heat and simmer for at least one hour or until the beans are soft. Transfer the beans with a slotted spoon to a bowl and set aside. Add the turkey legs or chicken meat to the remaining liquid and bring to a boil. Add the onions, bay leaf, salt and peppercorns and simmer for one hour. Transfer the meat to a plate and strain the stock and return to the pot. Add the rice and oregano and cook for 45 minutes. Add the meat and chile and bring all ingredients to temperature. Ladle the soup to bowls and garnish with the cheese, avocado and parsley.

Vanilla Pound Cake
Original Land O Lakes Baking Recipes - Offered by Saratoga resident Rose Moses.
Serves: 16 people Prep Time: 20 Minutes Bake Time: 50 Minutes
2 Cups sugar
1 Cup unsalted butter - melted (Land O Lakes)
4 Eggs
4 Teaspoons vanilla
3 Cups all-purpose flour
2 Teaspoons baking powder
1 Cup milk
Heat oven to 350 degrees
Combine sugar and melted butter in a large bowl. Beat at medium speed, scraping bowl often until creamy. Add eggs, one at a time, beating well after each addition. Add vanilla, beat until well mixed.
Stir together flour and baking powder in a small bowl. Gradually add flour mixture alternately with milk to butter mixture, beating at low speed until well mixed.
Pour batter into greased and floured 12-Cup Bundt or 10-Cup tube pan. Bake for 50-60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan; ENJOY!
